The Best Gluten Free “Bread” Crumbs

Ingredients:

  • 12 cups gluten free crispy rice cereal
    • I recommend Malt ‘O Meal because it is labeled gluten free, cheap, easy to find just about anywhere (sold at Walmart), and comes in huge bags
    • IMPORTANT: for any brand, always, always, always double check for the gluten free label – some brands contain malt, including brand name Rice Krispies (but not, ironically, Malt ‘O Meal)
  • 1/4 cup Lawry’s season salt

Tools:

  • Good blender, OR
  • Gallon plastic bag and rolling pin

Directions

  1. Place crispy rice cereal in blender or plastic bag.
  2. Blend or roll into three cups of fine powder for more uniform bread crumbs or, for chunkier, more panko-like crumbs, until desired consistency is achieved.
  3. Add season salt and mix well.
  4. Use to make gluten free chicken nuggets, boneless wings, etc.
